Potete comunque utilizzare gli aromi che pi\u00f9 vi piacciono.<\/p>\n\n\n\n<p>Olio EVO<\/p>\n\n\n\n<p>Sale<\/p>\n\n\n\n<p>Pepe bianco (il pepe bianco ha un gusto pi\u00f9 delicato rispetto a quello nero e quindi \u00e8 pi\u00f9 indicato per accompagnare piatti di pesce)<\/p>\n\n\n\n<p>Vasetti Weck da 500cc<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n\n\n\n<p>In questa tecnica di cottura bisogna tenere conto dei diversi tempi di cottura di alcuni alimenti presenti nella ricetta, per cui si deve procedere con una precottura lessando, sbianchendo o saltando in padella.<\/p>\n\n\n\n<p>Iniziamo quindi a pulire le patate e tagliarle in quadretti per poi andare ad immergerli in acqua fredda, salata. Cuocere per 10 minuti. Scolare e tenere da parte.<\/p>\n\n\n\n<p>Lavare e tagliare in spicchi i pomodorini, affettare la cipolla di Tropea e tenere tutto da parte.<\/p>\n\n\n\n<p>Lavate la zucchina e fate una dadolata. Sbianchite in acqua per due minuti, scolate e tenete da parte.<\/p>\n\n\n\n<p>Pulite bene i calamari. Sbollentateli in una casseruola con acqua, aceto e sale. Questo procedimento serve, non solo per dare pi\u00f9 gusto, ma anche come sicurezza in pi\u00f9 contro l\u2019Anisakis. Tagliate a striscioline.<\/p>\n\n\n\n<p>Prepariamo ora i vasetti che vanno riempiti solo per i 2\/3.<\/p>\n\n\n\n<p>Iniziamo a mettere sul fondo le verdure miste. Adagiare sopra i calamari con le erbe aromatiche tritate grossolanamente e finiamo con un altro strato di verdure miste.<\/p>\n\n\n\n<p>Un filo di olio EVO, un pizzico di sale e una manciata di pepe bianco.<\/p>\n\n\n\n<p>Chiudere i vasetti. A questo punto procedete a secondo del metodo che avete scelto per la cottura.<\/p>\n\n\n\n<p>In questo caso abbiamo scelto di cuocere direttamente sul fuoco. Prendete una pentola, riempite con acqua fino a 2\/3 e inserire i vasetti. Mettete uno strofinaccio pulito tra un vasetto e l\u2019altro in modo che durante l\u2019ebollizione non si urtino tra loro. Cuocere per 15 minuti da quando l\u2019acqua bolle. Trascorso il tempo lasciate riposare per 20 minuti.
