Un semplice termometro pu\u00f2 salvarti da problemi ben pi\u00f9 seri.<\/span><\/p>\n<p><strong>USA CONTENITORI PROFESSIONALI, CHIUSI E ETICHETTATI<\/strong><\/p>\n<p>Niente pellicole improvvisate o vaschette recuperate.<\/p>\n<p>In una cucina professionale:<\/p>\n<ul>\n<li>Usa contenitori in plastica alimentare certificata o acciaio inox<\/li>\n<li>Chiudi sempre con coperchio ermetico<\/li>\n<li>Applica etichette con: nome prodotto, data preparazione, data scadenza<\/li>\n<li>Rispetta le regole FIFO (First In, First Out): usa prima ci\u00f2 che \u00e8 stato messo in frigo per primo<\/li>\n<\/ul>\n<p><strong>OBIETTIVO: ordine, tracciabilit\u00e0 e zero confusione.<\/strong><\/p>\n<p><strong>SEPARA SEMPRE ALIMENTI CRUDI DA QUELLI COTTI<\/strong><\/p>\n<p>E\u2019 una delle basi dell\u2019HACCP (Hazard Analysis Critical Control Point)<\/p>\n<p>Cibi crudi (carne, pesce, uova, verdure non lavate) NON devono mai entrare in contatto con cibi cotti o pronti al consumo.<\/p>\n<p><strong>USA:<\/strong><\/p>\n<ul>\n<li>Taglieri dedicati per ogni categoria (meglio se colorati)<\/li>\n<li>Frigoriferi o scaffali separati, oppure zone ben distinte nel frigo<\/li>\n<li>Coltelli e utensili distinti, lavati e sanificati tra un uso e l\u2019altro<\/li>\n<\/ul>\n<p>Una contaminazione incrociata pu\u00f2 causare intossicazioni alimentari gravi.<\/p>\n<p><strong>RISPETTA I TEMPI DI CONSERVAZIONE<\/strong><\/p>\n<p>Anche se un alimento \u00e8 ben conservato, non pu\u00f2 restare in frigo all\u2019infinito.<\/p>\n<p>Ecco una guida indicativa:<\/p>\n<ul>\n<li>Carne cruda\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2-3 giorni<\/li>\n<li>Pesce crudo\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1-2 giorni<\/li>\n<li>Cibi cotti\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a02-3 giorni<\/li>\n<li>Salumi affettati\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 3-5 giorni<\/li>\n<li>Verdura cotta\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2-3 giorni<\/li>\n<li>Latte aperto\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2-3 giorni<\/li>\n<\/ul>\n<p>Un consiglio: crea una scheda giornaliera di controllo scadenze per evitare errori.<\/p>\n<p><strong>CONGELARE: s\u00ec, ma con criterio<\/strong><\/p>\n<p>Congelare non \u00e8 un metodo per salvare alimenti \u201ca rischio\u201d.<\/p>\n<p>Va fatto in condizioni perfette, con prodotto ancora integro e fresco.<\/p>\n<p>Regole base:<\/p>\n<ul>\n<li>Usa contenitori adatti al congelamento<\/li>\n<li>Etichetta sempre con data e nome del contenuto<\/li>\n<li>Non congelare mai alimenti gi\u00e0 scongelati (a meno che non siano stati cotti)<\/li>\n<li>Rispetta i tempi: ogni alimento congelato ha una durata massima (es.carne max 6 mesi)<\/li>\n<\/ul>\n<p><strong>APPLICA (davvero) IL MANUALE HACCP<\/strong><\/p>\n<p>Il manuale HACCP non \u00e8 un obbligo burocratico, \u00e8 una guida operativa concreta.<\/p>\n<p>Prevede:<\/p>\n<ul>\n<li>Procedure di controllo delle temperature<\/li>\n<li>Registrazione delle scadenze<\/li>\n<li>Gestione degli allergeni<\/li>\n<li>Pulizia e sanificazione regolare<\/li>\n<\/ul>\n<p>Tieni tutto tracciato e aggiornato, in caso di controlli sanitari o ispezioni ASL.<\/p>\n<p><strong>IN SINTESI: 7 REGOLE D\u2019ORO DA NON DIMENTICARE<\/strong><\/p>\n<ul>\n<li>Rispetta le temperature<\/li>\n<li>Usa contenitori chiusi e etichettati<\/li>\n<li>Separa crudo e cotto<\/li>\n<li>Rispetta le scadenze<\/li>\n<li>Congela in modo corretto<\/li>\n<li>Segui il manuale HACCP<\/li>\n<li>Controlla ogni giorno<\/li>\n<\/ul>\n<p><strong>UNA BUONA CONSERVAZIONE E\u2019 ANCHE UN BUON INVESTIMENTO<\/strong><\/p>\n<p>Tenere bene gli alimenti non \u00e8 solo una questione sanitaria.<\/p>\n<p>Significa meno sprechi, meno problemi operativi e pi\u00f9 qualit\u00e0 nel piatto.<\/p>\n<p>Una cucina pulita, organizzata e consapevole lavora meglio e trasmette fiducia a tutto lo staff (e al cliente, anche se non lo vede direttamente).<\/p>\n<p>Vuoi sapere in che cosa consiste un controllo da parte dell\u2019ASL?<\/p>\n<p>Iscriviti alla nostra Newsletter per ricevere contenuti Extra.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; LE REGOLE BASE DELLA CONSERVAZIONE DA NON DIMENTICARE MAI In una cucina professionale, la corretta conservazione degli alimenti non \u00e8 solo una buona pratica: \u00e8 una questione di sicurezza, legalit\u00e0 e qualit\u00e0.
